Day 8 and Counting

Some good did come of the burglary-related broken window that my car suffered: I got to work from home yesterday (in order to sort out the insurance and repair.

What a treat it was, so nice to get to be productive at work and at home. I even "got home from work" early enough to make a pretty great dinner. I used this recipe: http://www.kidswithfoodallergies.org/featured_recipe7.php
from Kids with Food Allergies. I think I overdid the chicken just a bit, but it is still a pretty good dish.

Here's what kept me going yesterday:

Breakfast
Quinoa (prepared with gluten free, yeast free, garlic free, etc. organic chicken broth) with a Few Bites of Buffalo Burger

Snacks
Plantain Chips
Brown Rice Cake with Cheese

Lunch
Organic Buffalo Burger with Tomato Sauce and Goat's Milk Cheese (a sort of "pizza" if you will)

Snack
Plantain Chips

Dinner
Chicken Cooked in Brown Rice Flour, Olive Oil and Goat's Milk Butter with Stewed Tomatoes and Shitake Mushrooms

Snack
Brown Rice Cake with Goat's Milk Cheese (melted, yum!) and a Dash of Dill and a Small Hurricane--I've got to find a better tasty alternative to wine, this is too sugary and has FD&C colors, eek!!
