Gluten Free is the Way for Me!

After nearly a four days of waiting for my Celiac test results, I called the lab to inquire. Fortunately the bad doctor put down that a copy of these results be mailed to me, so in spite of privacy laws, I was able to have my report faxed to me (the snail mailed version has yet to arrive).

Only problem, I was not able to interpret the cryptic results. I hurriedly called the bad doctor's office: they could not find my file. I called back: the nurse searching for my file had gone in with a patient. I called back: my results had supposedly not been faxed to them as yet. I for the umpteenth time informed the nurses that I had a copy in my hands, only I needed help interpreting it. I told the nurse I was faxing my copy over now, she said it would be placed on the doctor's desk to get back to me at his convenience.

Frustrated and impatient, I faxed a the results to my mom, who was many lifetimes ago a med tech. She took the results as negative, I took this news as depressing. When my least favorite doctor called that night to reiterate that I do not have Celiac Disease, I finally asked all the questions I was still seeking answers to.

-If I do not have Celiac, then why do I feel SO much better when I do not eat gluten? My skin is clearer, my tummy flatter, my digestive system working properly. I seem to clearly have poor reactions to gluten, so why if not Celiac?
-I was diagnosed as allergic to pork and lamb. So what does this mean? I am never to eat bacon or fancy lamb dishes again? If I slip up, will I go into shock, develop a rash or simply have a tummy ache?

Though I am still swearing off ever going back to that particular doctor's office, he is a brilliant man and seems very well informed. What he lacks in personality he almost makes up for with intelligence, almost. He said that I am probably gluten intolerant and that by watching for reactions to my diet I would be the best one to diagnose this.

For the pork and lamb he was also a proponent of the "eat and see" mentality: eat it and see what happens, and how bad the reaction if any.

My next step is to go to a gastroentrologist--one recommended by a friend, not by yelp! And as for my diet, I think I will steer clear of pork and lamb for now, as I don't tend to prefer either. As for gluten, I will continue to follow a gluten free lifestyle: from food to skincare. Everything for me just works better sans gluten. I have also noticed that my body seems to prefer goat's milk products to cow's milk. The latter tends to leave me bloated and puts my tummy in a bit of a funk.
